A recent commission in Dublin to photograph behind the scenes at the kitchens of the rather luxurious Merrion Hotel. I spent a couple of days with the executive chefs and their teams documenting the work across the two Michelin starred Patrick Guilbaud restaurant and the Garden Rooms restaurant.

Despatched today to the New Forest to photograph James Golding, head chef at The Pig hotel and restaurant in Brockenhurst. James and his team forage for mushrooms for their menu, some of which he is holding. I told James about my recent magic mushroom picking experience in Wales, he wasn't as impressed as I'd hoped.
